The Organic Gaia 1.1 from Waterford distillery is the first Irish whisky to be certified organic by the Organic Trust. It has been made from 100% organic barley grown by seven different farmers in Ireland making this a unique bottling from this innovative distillery. This whisky was aged in 42% first-fill American oak, 17% virgin American oak, 18% Vin Doux Naturel (sweet fortified wines) and 23% premium French oak. A limited release of 24,000 bottles.
